Shrimp Stack
Cal-a-Vie Destination Spa Resort (California)

Serves 4

12 large shrimp(cleaned, poached, and halved)
2 avocados, diced
2 large tomatoes, diced
1 mango, diced
1 bunch of freshly picked cilantro, no stems
4 scallions, sliced thin
2 T fresh lemon juice
salt & pepper to taste
*For a spicier dish add 1 jalapeno, minced with no seeds

Mix all ingredients in a medium sized bowl, season with salt & pepper to taste.Use a food mold or plastic cup to shape the salad. Serve with large croutons and garnish with Cilantro sprig.
