Santa Fe Chicken Rolls

6 free range chicken breasts
1 roasted red bell pepper, peeled and seeded, cut into 1/2" X 3"
strips
6 scallions cut to 3" strips
6 strips of feta cheese - 1/2 oz. each
3 tbs. chopped cilantro
black pepper to taste
2 egg whites, beaten
1 cup rolled oats
1/4 cup sesame seeds
1/4 cup whole wheat flour
pinch salt (opt.)
Pound
chicken breast until double in size. Sprinkle with
cilantro and black pepper. Place vegetables and feta cheese in center
of breast and roll up. Place seam side down in baking dish.
Prepare coating by mixing sesame seeds and flour in blender or food
processor for 1 minute, then add oats to coarsely chop. Dip chicken
rolls in egg, then coat in oat mixture.
Bake at 400 degrees for 15 minutes or until done.
Serve
with Roasted Red Pepper
Sauce.
