SPACUISINE.COM CURRIED PUMPKIN PURÉE SOUP with YOGURT SWIRLS Mountain Trek Fitness Retreat & Health Spa Serves 6-10 1 small/medium Pumpkin-peeled, seeded and diced 1 large or 2 small yams-peeled and diced 1 medium yellow onion-peeled and diced 2 cans lite coconut milk 2 Tbsp. curry powder 4 Tbsp. honey sea salt and white pepper to taste ½ cup plain yogurt, whipped to incorporate air Place all ingredients except salt, pepper and yogurt in soup pot and cover with 1 quart (litre) of water and simmer until yams and pumpkin are very soft. Puree in a blender, season with salt and pepper and pour into warm serving bowls. Put whipped yogurt into a squeeze-bottle and drizzle over soup. |
