Peach Melba

"Enjoy those summer peaches while they last!"
- 1/2 cup of fresh crushed raspberries
- 1/2 cup of apple juice, unsweetened
- 1 teaspoon of unsweetened grape jelly
- 3-4 drops of almond extract
- 1 teaspoon of corn starch
- 4 peach halves
- 4 teaspoons of low calorie Cool Whip for
topping

Combine raspberries, apple juice, grape jelly
and extract in saucepan and bring to a boil.
- Simmer for about 30
minutes. Dissolve the corn starch in a little water and add to mixture
to thicken.
- Allow sauce to cool.
- Place peach halves in
sherbet dishes.
- Place in refrigerator to
chill.
Garnish with whipped
topping if desired.
Serves four. 40-50 calories
per serving
