Pumpkin and Apple Coffeecake

Amount Measure Ingredient

  • 1 cup flour, whole-grain wheat
  • 1 cup flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon allspice
  • 1/4 teaspoon clove
  • 1 cup pumpkin
  • 1/4 cup egg beaters¨ 99% egg substitute
  • 1 ounce canola oil
  • 1 cup buttermilk
  • 1/4 cup honey
  • 8 tablespoons coffeecake topping -- see separate recipe
  • 8 oz apple slices, peeled

Preparation Method
--------------------------

  1. Mix, sift all dry ingredients together in a bowl.
  2. Mix all liquid ingredients in a separate, large bowl.
  3. Mix the pumpkin with the liquid ingredients.
  4. Sprinkle the drys onto the wets and fold in until just mixed; try not to over mix. 
  5. Pour the batter into a pan sprayed with pan coat.
  6. Arrange the sliced apples on top of the batter, and sprinkle the topping on top of the apples.
  7. Bake at 400 degrees for 30-35 minutes or until it tests done.
